Ingredients

  • 1 thinly sliced steak (your choice of cut)

  • 2 tbsp olive oil

  • Salt (to taste)

  • 1 onion, sliced

  • 3 cloves garlic, minced

  • 1 can of carrots (drained)

  • 1 can of black beans (drained and rinsed)

  • 1 jar of Linzano Salsa (https://amzn.to/2WQHBqG) or other of your choice

  • 1 box of minute rice (or enough for 2-4 servings)

Instructions

  1. Cook the Steak:

    • Heat the olive oil in a frying pan or pot over medium-high heat.

    • Season the thinly sliced steak with salt and sear it in the pan until browned and cooked through (about 3-5 minutes).

  2. Sweat the Onions and Garlic:

    • Add the sliced onions and minced garlic to the pan. Cook until softened (about 3-4 minutes), stirring occasionally.

  3. Add the Vegetables:

    • Add the canned carrots, black beans, and Linzano Salsa to the pan. Stir well and simmer for 5-15 minutes, allowing the flavors to combine and heat through.

  4. Cook the Rice:

    • While the stew simmers, prepare the minute rice according to the instructions on the box (usually takes about 5 minutes).

  5. Serve:

    • Once the rice is ready and the dish has simmered to your liking, serve the steak and vegetable mixture over the rice.
