Ingredients
2 liters water
1 whole clove of ginger
6 cloves garlic, smashed
Light soy sauce (to taste)
Sugar (to taste)
2 potatoes, peeled and chopped
1 yam, peeled and chopped
2 carrots, peeled and chopped
1 lb pork short ribs
2 white onions, sliced
2 green onions, sliced

Instructions
Prepare the Broth:
Bring 2 liters of water to a boil in a large pot.
Add the whole clove of ginger and smashed garlic.
Add light soy sauce until the flavor is strong enough, then stir in sugar to balance the sweetness. Bring back to a boil.
Add the Vegetables:
Add the chopped potatoes and yam, bringing the mixture back to a boil.
Once boiling, add the chopped carrots and bring to a boil again.
Cook the Pork:
Add the pork short ribs to the pot and bring it all to a boil.
Finishing Touches:
Add the sliced white and green onions, and continue cooking until the potatoes are soft.
Once the potatoes are tender, the stew is done. Serve hot and enjoy!
